In this cold weather, it is not hard to crave for this dish. Not only makes you feel warm but makes your body feel good too.
It usually the food I eat when having a fever or stomachache. I believe it’s because of the healing power of the ginger so I make sure I put extra more when I make it.
Ingredients:
- 5 pcs of chicken thigh fillets, cubed (may use chicken breast too)
- 2 Tbsp olive oil
- 2 Tbsp chopped garlic
- 1/3 cup chopped onions
- 1/4 cup sliced ginger
- 1 Tbsp salt
- 1 tsp pepper
- 4 Tbsp chicken base
- 2 pinches of saffron
- 2 cups of white rice
- 8-10 cups of water
Garnishes: (optional)
- chopped green onion
- hardboiled eggs
- crispy/roasted garlic
- lemon
Instructions:
- Heat the oil in the pot
- Cook in garlic, onion & ginger until fragrant
- Add in chicken then seasoned with salt & pepper
- When chicken is half cooked, add in rice
- Stir it all for about 3 minutes
- Mix in the chicken base
- Add 4 cups of water then let it simmer for about 5-7 minutes & stir in between
- Once thicken, stir in the saffron
- Add 3-4 more cups of water
- Let it boil until rice is fully cooked, adjust water (1 cup at a time) and stir in between so the rice won’t stick at the bottom of the pan
- Add more water if you like the soup thinner
- Adjust the taste by either adding more salt or 1 tsp of chicken base
- Serve in a bowl with garnishes
